Catherine's Mediterranean Salad


Ingredients


2 Mild Italian Sausages

2 Roma Tomatoes

1 Medium Head of Lettuce

2 Tablespoons Parmesan Cheese

1 Tablespoon of Extra Virgin Olive Oil

1 Carrot

1/4 Pound of Brie

1/4 Cup of Olive Oil & Balsamic Vinaigrette


Procedure


Part 1

(1)

Remove skin from sausages.
( I find it easier to remove skin from
sausages frozen or leave for a short time
in the freezer to chill - about 45 minutes. )

Under MEDIUM HEAT
( My heat settings range from 1 - 10; I used "5". )

Add sausage to pan, then add
1 Tablespoon of your
Extra Virgin Olive Oil

Cook until browned

Remove from heat and let cool.

NOTE: DO NOT THROW AWAY SAUSAGE OIL DRIPPINGS!
We will use it later - leave in pan to cool

Cut 'long ways', then put in fridge.


Part 2

(a)

Cut up lettuce

(b)

Cut up Roma Tomatoes, set aside

(c)

Cut up Brie into small rectangles
not too thick, try your best
or about half a teaspoon if it melts.

(Note: Brie tends to "melt on you")

After you are done with Brie set aside

(d)

Cut Carrot in 2.

Grate carrot. After you are done
put your carrot into cool sausage oil,
mix and set aside.


Part 3

Make Your Salad

(1)

Divide Lettuce into 2 bunches

(2)

Spread out one bunch
of lettuce in bowl

(3)

Sprinkle one tablespoon of
Parmesan Cheese on lettuce.

(4)

Lay down half of tomatoes on Lettuce

(5)

Lay down half of your sausages

(6)

Lay down half of your carrots

(7)

Lay down half of your Brie
(Note: Again, if Brie has melted,
just take a utensil and spoon it on)

(8)

Sprinkle half ( 1/8 cup ) of your Vinaigrette
on top of everything.


Part 4

Part 4 is a repeat of part 3
Just use the rest of your
ingredients in this last part.

RECAP:

Your lettuce is spread /
Then:
Parmesan Cheese / Tomatoes /
Sausages / carrots / Brie,
then Vinaigrette





Lightly toss and That's it!


It's like a meal!
