Gabriel's Chicken
in
Strawberry Cream Sauce


Ingredients


4 Cups of Strawberries

6 Chicken Thighs

2 Chicken Drumsticks

Half of 1 Red Onion

2 Cloves of Garlic

1 stick of Butter (8 Tablespoons)

1 pint Half-n-Half ( Light Cream )

4 teaspoons of Salt

1 teaspoon of White Peppercorns


Procedure


(1)

Divide your Strawberries into 2.

That is, you will have, TWO;
(2 - Cup) bunches.

(2)

Dice each (2 - Cup) bunch of strawberries and set aside.
(Note: You will be using one (2 - Cup) bunch in the first
Phase of this recipe; and the other is added later
).

(3)

Dice your onions and set aside

(4)

Dice your garlic and set aside.

(5)

Grind your white peppercorns and set aside.


Phase 1


(a)

Fill pot at chicken level with water.
(Note: That is, just let water reach top of chicken).

(b)

Add 2 teaspoons of salt to chicken in water.

(c)

Add your first diced (2 - Cups)
of strawberries to chicken.

(d)

Over MEDIUM HEAT
( My heat settings range
from 1 - 10; I used "5". )

Bring to boil until strawberries dissolve well.
(Note: Boil for about 30-40 minutes.
Not more than 50 minutes.)


TURN OFF HEAT.


(e)

Drain chicken of strawberry
water into pot and set aside.


PLEASE SAVE 1 CUP OF YOUR STRAWBERRY
WATER YOU DRAIN, YOU WILL USE IT LATER
!


(f)
Please save the strawberry pulp and any
solids in your strawberry water and set aside.


Phase 2


(1)

Over MEDIUM HEAT
( My heat settings range from 1 - 10; I used "5". )

Melt your 1 stick of butter in
pot and add your onions and garlic.
(Let them brown)

(2)

Add boiled strawberry pulp and
other solids you saved
into browned onions and garlic.
And mix in.

(3)

Add your half-n-half (light cream)
to your onion/garlic/strawberry pulp
in pot and stir well.

(4)

Add your chicken and mix well.

(5)

Add your 1 cup of strawberry
water you saved to this and mix in.

(6)

Add your last diced (2-CUPS) of
strawberries to pot and mix in.

(7)

Add 2 teaspoons of salt and your ground
white peppercorns to pot and mix in.

(8)

Reduce heat to LOW.

( My heat settings range
from 1 - 10; I used "3". )

Let liquid reduce.
Stir occasionally.


Phase 3


(a)

Let cook for about an hour, stirring occasionally.
Watch sauce and chicken, see to it that chicken
does not break up too much. Feel when it is ready!


Turn off heat and that's it!

Serve with anything you like.

Try it with potatoes and Asparagus (or any veggie)

Try it over pasta!

Or just try it with thick bread!
