Ingredients
2 Chicken Thighs
1 1/2 sticks of Rosemary
1/2 small Red Onion
2 Cloves of Garlic
1 Tomato
2/3 Cups of Parmesan Cheese
Measure 1 Cup of Extra Virgin Olive Oil
THEN SUBTRACT FROM THIS 5 Tablespoons of Extra Virgin Olive Oil.
So you will have: 1 CUP MINUS FIVE TABLESPOONS of Extra Virgin Olive Oil.
1 Teaspoon of Salt
1/2 Teaspoon of Black Pepper
PART 1
Prepare the chicken

Dice Onions, set aside
(2)
Dice Garlic, set aside
(3)
Fill pot with water to "chicken level"
(4)
Add your onions and garlic to chicken
(5)
Cover, and boil chicken with diced onions
and garlic at medium heat for 20 minutes.
( My heat settings range from
1 - 10; I used "5". )
Drain water off chicken, after 20 minutes.
SAVE BOILED ONIONS and GARLIC.
Discard water.
( Note : Chicken will be a bit rare.
It will cook later on in the recipe!
Further, I also use the chicken skin
in this recipe.)
PART 2
(a)
Remove bones, cut up chicken and set aside
( When your chicken cools, cover and put
in fridge, until later on in the recipe. )
(b)
Dice Tomato, set aside
(c)
Dice Rosemary, set aside
(d)
Combine Tomato / Rosemary / Salt / Black Pepper
Set aside
PART 3
Prepare sauce
(i)
Add your Extra Virgin Olive Oil to
pot and heat Oil at Medium heat
( My heat settings range from 1 - 10; I used "5". )
(ii)
When oil is heated, add your boiled onions
and garlic you saved to oil and brown.
( Note: Please be careful, your onions
and garlic are "wet". When you add to oil,
it may splatter, be sure to stir and cover
as soon as possible. )
(iii)
When onions and garlic have browned, add
tomato / rosemary / salt / black pepper mix
to it.
Cover and reduce heat to
LOW for 20 minutes.

from 1 - 10; I used "3". )
Stir occasionally.
(iv)
After the 20 minutes are up, add your Parmesan
Cheese at LOW. Cover and let cook another
20 minutes.
( My heat settings range from 1 - 10; I used "3". )
( Note: The last 4 minutes, please watch the Parmesan
cheese carefully to make sure it does not stick to the
bottom, just stir more often until the time for this
stage of cooking is up.
Further, you will notice the Parmesan cheese "clumping";
congealing as time goes by in this stage of the recipe.

Add chicken now. Cover and let cook for 10 minutes.
Keep heat at LOW
( My heat settings range from
1 - 10; I used "3". )
Stir occasionally.
Now let's make the dough for the pizza!
After the 10 minutes are up, turn off
heat, your pizza sauce is now ready!
