Ingredients
2 Eggs
1/2 Teaspoon of Salt
1 Tablespoon Vanilla
3 Tablespoons of White Sugar
1/2 Cup of Goat milk
1 Tablespoon of Honey
1/3 Cup of Water
2 Tablespoons of Brown Sugar
1/2 Cup of White Flour
Vegetable Oil
You will use 2 Tablespoons
per Pancake as you fry them.
TURN OVEN ON TO WARM.
This is to keep the done
pancakes warm - you will not
be baking anything. If your oven
does not have this heat setting
you may have to reheat the first
2 pancakes you make.
PART 1
(1)
In a mixing bowl put all
your ingredients except
your flour and mix well.
That is, in a mixing bowl, put in your :
eggs / salt / vanilla / white sugar
/ goat milk / honey / water / brown sugar
Mix Well.

Add your Flour and Mix well.
( Note: Your pancake
batter will be very liquid
- it won't be "thick". )
PART 2
(1)
Over medium heat, in a fry pan,
add 2 Tablespoons of Vegetable oil.
( My heat settings range
from 1 - 10; I used "5". )

Pour in enough batter to
cover about half of pan.
(3)
Lift pan and tilt, so the
rest of pan is covered with batter.
(4)
Place back on heat and
let pancake turn golden brown.
( This should take
about 2 minutes )
(5)
When golden brown, flip gently and
let other side turn golden brown
in about 2 minutes.
(6)
When other side is golden brown,
roll it up and place in baking
dish and place in your oven set on WARM.
Or reheat if your oven has no "WARM" setting.
This batter should
make 4 Swedish Pancakes.
Just be sure to use 2
tablespoons of oil per pancake.
For Topping, put
anything your like!
I put Ice Cream on mine!
